I am in the process of graphing an old portrait of myself when I was 15. (55 years ago) I spent a lot of time in a photo shop program "cleaning up" the picture, but am still not satisfied mostly with the background. How much editing can I do after it leaves the wizard? I had tinted the picture with oils at the time, so it is in color.

Once you "approve" an image into the system to work on, you have free rein to change any or every single stitch and every single color if you want. If you want to clear out the background, you can mark areas and clear them all to a single color (choose a new color not used elsewhere). You may have to individually mark some areas near the figure to get ALL the background. Then, if you remove that color (not used elsewhere), your entire background will go away!

That is just one example of what you can do. Just what you end up doing is up to your imagination. The import is just the first step. It should never be a final step. Personal "tweaking" is needed.
