How can I add a button to display the symbol panel to one of the toolbars at the top of PC Stitch.
I have made a new toolbar that I put my favorite tools on so I don't have to search for them or use the text menu.
However, I have not been able to find the 'display symbol panel' command in the add/remove buttons customization list.

How do I add a button for 'display symbol panel' to my toolbar?

The toolbar is for the top menu. The display symbol panel is on the left side and its icon is always available. You can pin it to keep it open or just leave the icon (toggles with the available color / palette icon as active -- I don't think you can have both active at the same time.

I know that if you have both colors and symbol panels you can switch back and forth.
However, if you close the symbol and color panels completely, is there a BUTTON to pull up the symbol panel like the color panel has, or can I add a button to do so to a toolbar?

No, there is no button if you accidentally close either the color or symbol panels. You can only use View > Panels to bring them back.
