Just click on Pattern Properties (A new pattern brings this up first by default), and then click on the Display tab. Click on that color grid to the left of the cloth color and down farther it says to define custom color.
However, I do not know if that color is saved for other patterns. You can define it for that pattern but I don't guarantee you can for others. Previous versions of the software did not save the custom colors.
