How should I reduce number the colors for example I want only 8 to 10 colors in the menu list and still have contrast in my design from a scanned photograph?

As you progress through the Import Wizard, there is a step where you set the maximum number of colors to be used. The default is 50. Just change that if you want fewer colors.
