I would like to create a sampler, with a picture in the middle from a photo, verse at the top and bottom. How can I do all of this in ONE design, or do I have to piece it together?

You should be able to do this in one design. Start by importing the picture. Then increase the size of the design to allow for the extra space for the design around the picture and center it to get the blank space around the outside edges.
