I've made all my CS patterns with the "symbol over color squares". How would you change them to "symbol over squares". In other words, I would rather use black grid and symbols and not use colors.

Just change from the list of "symbol options" at the top menu bar. Click on them to see the effect. What you see viewing is not necessarily what you see printing. The pattern is saved with the codes themselves and then "converted" to the visible form using the display options specified. Which you use really does not affect the pattern at all.
