It's generally a good idea not to have your design too "busy". Also don't have the number of colors too large. You end up with a lot of confetti stitches you need to remove even with a low number of colors.
Your best bet is to have your image SMALL! Try to have the pixel dimensions of your image about the same as your desired stitch count. That would give you 1 pixel / stitch or 1 stitch/ pixel (either way you want to look at it).
By patient, I mean you need to keep playing with it. Import and then make few changes, view the pattern, make a few more, view the pattern,... until you get what you want.
Don't worry about exact color matches. Remember that the computer sees the color differently than you do so you just have to get it so it looks good to you, not necessarily exactly matching the "original" image.

Not that I can't be pateint, but, could you explain what you meant when you said, "you need to be patient"? I've had a problem with getting some colors to match (of a picture that looks Claude Monet style). I was thinking it was related to me being a new user. Are there certain types of photo/pictures I shouldn't try to recreate? Do you have any tips on getting the colors to match better?

Enjoy your new "toy". Be careful on converting photos to cross-stitch patterns.
First, it's as much an art as anything else. You have to be patient. Also, if your photo is of a copyrighted image, you can only use it yourself. You can't give the pattern away to anybody else without violating copyright.
Just take it slow and easy. PCStitch is a lot of fun!
