I had reset the floss count for backstitching in the Floss Properties sidebar, but when I tried to print the pdf, the count wasn't appearing in the legend or the information sheet. How do I get the number to show up so that users know how many strands of floss to use for that? I want it to be more than the standard 1, but I don't want to have to pepper the pattern with notes if I don't have to.

There is a print option to show the strand count on the information page but it only appears to work for the cross-stitches. The other stitches such as backstitch and french knots do not show the strand count.

I suggest you just add a note for the information page that includes the strand count for backstitches. Often that page is used to specify the order that backstitching should be done and this can be added easily there.
