How does one restrict the number of colors used in a pattern?

If you're talking about during an import of an image, The line of tabs that starts with Crop, Background, Foreground ... has an arrow to see more tabs and one of them is "Floss". You can specify how many colors to use.

As for a manual chart, you have full control.
