Trying to create a bib for my grandson using Dinoalphabets, but this program wont let me do any typing in an text boxes. What am I Missing

When you set an alphabet, in this case, a stitched alphabet, it doesn't give you a text box -- what it gives you is a place for the first letter. You type your first letter, it displays the stitches for that and positions for the next letter. You can see the height of the letters but not the width.
