I love pcstitch :-)

I find myself only liking certain symbols as I find them easier to see etc. Is there a way of making some into a set that could be my default ones? Cause some I like are in different symbol sets, so I have to switch back and forth. And would be handy to have them all in one part.

You cannot set a sub-set of symbols without creating your own font (possible but not easy). However, you can define your default palette which is a combination of default colors and symbols to match them. If you do that, you can "replace" the colors with the colors you want for any given pattern.
