How do you pick a certain color to use when making text? I've not been able to find how to do that.

I just checked. If you're using the text fonts (samples of various fonts available) and want it to be in a given color, just select the desired color from the palette of defined colors for that pattern.

As for your second question -- Once you exit the text mode, you need to merge that text to the background to be able to access the actual stitches within the text. As it is done, it is considered an "object" so it can be manipulated more easily all at one time.

However, if you merge to the background, it is no longer considered text -- just stitches.

Another question: Is there a way to put the cursor inside a text window where you need it to make a correction rather than using the back key to get where you need to make the correction?
