I just purchased PC Stitch 10 and have a few questions that I have not been able to figure out.

The bottom of my symbols are being cut off by the lower edge of the stitch box. How do I get the symbols to be centered in the boxes representing the stitches?

I'm not sure. That may be a font size issue or maybe the use of high DPI (more than 100%). I suggest you contact Mark on this. You can contact him from his email in his profile on this board.
